Turning Leftovers into Meals

''Waste not, want not'' - used to say that if a person never wastes things he or she will always have what is needed.
Leftover food is perfect for creating new dishes. You can throw almost any leftover in a fried rice, on a salad or use them to make pies or stews. Let me show you how I used leftover potatoes and chicken roast to make this delicious salad for dinner.
Re-season your chicken & potatoes. I used garlic powder, shitto (shoutout Ghana), onion powder, black pepper, salt and rosemary.
Drizzle with oil, put them on a pan & pop them back into the oven for 10mins.
Start washing your vegetables at this point. I interchange between using salt, white vinegar or milton. Wash & let them dry
Bring out your chicken & potatoes. You just need them to be a little brown and for the new seasonings to sink into the food.
Assemble your salad together and viola. You have a balanced filling dinner, present with vegetables, protein and carb.
Other tips on what to do with your leftovers
- Store your leftovers smartly in an air tight clear container, so you may see what leftovers you have & that it is stored properly.
- Keep vegetable scraps to make stock. You can store them in a zip-loc bag in the freezer. When ready bring them out to defrost; simmer for 2 hours and strain. Viola a veggie stock (which can be frozen)
- No one will notice that your veggies are soft & wrinkly if you roast them. Just add onion, garlic or paprika powder and you are good to go. Perfect in breads, or with rice/pasta
- You can make fried rice with any leftovers from the fridge. Day-old rice, vegetables of any sort, meats, remnants of sauces can also be added to give your fried rice more flavour.
- Any left over meat can be used to make a hearty jambalaya or dirty rice
- Any rice leftovers can used to make stuffed bell peppers and baked in the oven
